味噌作り

今年も味噌を仕込んだ。

去年までは煮大豆を潰すのに苦労したけど、今回はフードミルと言う強い見方をつけたので、500gの煮大豆を潰すのにたったの15分ほどだった。以前は2時間ぐらいかかっていた。

潰れたら、塩と米麹を混ぜておいたものと混ぜ、味噌玉を作って、壷に投げ入れて、表面に塩をパラパラした後、ラップをかぶせる。大豆を細かく潰したせいか、かさは減っている。

味噌作りは、大豆を柔らかく煮るのに時間がかかるのと、潰す道具によるけど、簡単よ。あ、米麹を買ったら、甘酒も作るといいよ。寒い日には最適!今週も寒そうじゃん。
